CULINARY SKILLS

 


The Hospitality Industry continues to be one of growth with the need for trained personnel increasing. According to the Canadian Occupational Projections System (HRSDC), new positions will be generated at a growth rate of .8% compounded annually over the next decade. This translates into 44,664 new jobs by 2008.

To meet the needs of this growing market, Algonquin’s Hospitality Centre has created a certificate program designed to meet the entry-level requirements of those wishing to embark on a culinary career. Equal emphasis is given to the practical development of basic cooking/baking skills and to the underlying theoretical concepts of nutrition, food theory, menu planning, food cost control, and proper sanitation and safety practices.

All demonstrations and practical experience take place in the Centre’s state-of-the-art production kitchens and food demonstration laboratories.

To earn the certificate in Culinary Skills, students must successfully complete all compulsory courses and electives (minimum 70 hours). Successfully completed courses may be credited (where applicable) towards the full-time programs in Chef Training and Culinary Management.

Students will be given the opportunity to write the National Sanitation Training Program Examination. If successful, students will be automatically exempted from having to complete the Food Handlers’ Certificate from the City of Ottawa Health Department.


Transfer of Academic Credit (Exemption)
If you possess qualifications beyond the entry level of your program (such as successful completion of another college, university or professional association course), you may be eligible for a Transfer of Credit (or exemption) from an individual course.
